POKOTABI / GENEI . WAGAN
GENEI.WAGAN(ゲンエイワガン)
Hidden in a Hiroo basement, GENEI . WAGAN presents an inventive ramen kaiseki course that starts with pure dashi seasonings and culminates in bowls that evolve with every repeat visit.
01 / ABOUT THE PLACE
Stepping away from the quick-slurp style of typical ramen shops, GENEI . WAGAN approaches the craft as an unhurried, multi-course kaiseki experience. The opening bowl is an exercise in palate appreciation: guests sip the unadorned broth to taste the pure dashi extraction, then gradually stir in seasonings and house-crafted premium soy sauces. Watching clear, subtle umami transform into a complex broth sets an engaging tone for the meal to come.
Subsequent courses showcase refined Japanese twists on hearty fare, such as a Japanese-style ajillo combining Matsusaka pork spareribs cured with wine and soy sauce alongside the diner's choice of vegetables, as well as flame-seared wagyu offal hot pot or spicy medicinal mala hot pot. Whimsical creations like a ramen parfait garnished with salmon roe and jellyfish add variety, pairing easily with wine, cocktails, or craft beer.
The climactic bowl of ramen reflects the restaurant's signature concept: the recipe served changes with each visit. First-time diners encounter an elegant, dashi-driven bowl, while subsequent visits introduce richer broths and unexpected toppings. The noodles are often followed by a comforting egg-over-rice or fragrant fried rice, ensuring a memorable, deeply rounded conclusion.
Down a flight of stairs in Hiroo, guests press an intercom before the door opens into a sleek, dimly lit space with the quiet ambiance of a cocktail lounge. Operating primarily for dinner on a strictly reservation-only basis, it offers a thoughtful setting for an intimate gathering or an evening of culinary discovery.
